The A5 Japanese Wagyu arrived on a stone plate, marbled so heavily that each slice looked like a topographic map of fat and muscle. We laid a piece on the tabletop grill and watched it render almost instantly, the fat melting into the grate and the meat developing a crust that gave way to a buttery, almost liquid interior. This is a very different experience from Gyu-Kaku down the road: Sho Kalbi plays in the premium tier, with A5 Wagyu, Australian Wagyu, and USDA Prime Angus sharing a menu that reads like a steakhouse crossed with a Korean BBQ joint. The house Kalbi sauce, sweet and garlicky with a soy backbone, transformed the short ribs into something you will think about for days. Every order comes with soup or salad, steamed rice, kimchi, and pickled cucumber, turning a simple meat course into a proper Korean meal. Opened in December 2025, this is Naperville's most exciting new addition to the Korean dining scene.
