The Wedding Plov arrived in a mountain on a communal platter, and the table went quiet. Saffron-stained rice, studded with tender beef and lamb, chickpeas, and julienned carrots, each grain separate and glistening with rendered fat from the meat that had cooked into it from below. This is Central Asian soul food, the dish served at celebrations in Uzbekistan, and Shahirizada prepares it with the care of a family kitchen. The manti, hand-rolled dumplings the size of a child's fist, were filled with a lamb and onion mixture that released a burst of juice with the first bite. We paired them with a tangy yogurt sauce that cut through the richness perfectly. Tucked into a Route 59 strip mall, the dining room is modest but welcoming, with patterned textiles and the unmistakable aroma of cumin and lamb that greets you at the door.
