The sake flight turned a casual dinner into an education. Our server walked us through four pours — from a bone-dry junmai to a fruity ginjo — and suddenly the menu made more sense. The edamame dumplings with truffle oil were unlike anything else we tried: creamy, earthy, and a little luxurious in a way you don't expect from a sushi spot. The Riverwalk patio in July, with a chilled glass of nigori and the tuna tartare on crispy wontons, is one of those perfect suburban summer moments you file away and repeat annually.
About the Restaurant
Blue Sushi planted its flag on Water Street in 2017 and brought with it a commitment to sustainable seafood that sets it apart from the typical suburban sushi joint. The fish is MSC-certified where possible, the maki rolls are creative without being gimmicky, and the sake list is one of the deepest in the western suburbs. The Water Street location gives it a built-in Riverwalk adjacency that makes the patio a summer draw. The JB Roll, a tempura shrimp and spicy tuna number, is the bestseller for a reason.
