Absolute BBQ introduces a concept rare in the western suburbs: grill-at-your-table Indian barbecue. A live grill arrives embedded in the center of your table, and platters of marinated meats and paneer follow in quick succession. The Chicken Seekh Kabab was the standout, ground chicken seasoned with green chili and cilantro that charred beautifully over the open flame and needed nothing but a squeeze of lime. The Hyderabadi Chicken Dum Biryani, ordered as a side, arrived in a sealed pot that released a cloud of saffron-scented steam when cracked open, the rice layered with tender chicken and fried onions throughout. Beyond the barbecue program, the kitchen runs a full North Indian, South Indian, and Indo-Chinese menu that covers everything from Gobi Manchurian to Chicken Tikka Masala. The space seats 120 and fills up on weekends with families and groups who come for the interactive dining experience as much as the food itself.
